Our own field. Consistently Demeter.

We grow lettuce, vegetables, herbs, fruit and edible flowers exclusively with Demeter plant and seed on our own field right next to the house. Our own harvest. Pickling, fermenting, preserving and using only what is available to us - at the moment. We recreate traditional pub cuisine.

Sensibly seasonal. Highest quality standards with absolute freshness. Our business is currently in the conversion year for Kiwa organic certification BCS DE-ÖKO-001.

Sustainability from the bottom up.

Our vegetable, salad and herb cultivation is of the highest Demeter quality and our electricity and heat come from renewable sources right here at the HILZHOF.

The CO2-controlled ventilation system with heat recovery, as well as the 24 KW photovoltaic system and the biogas district heating with large buffer storage support us in this endeavour.

Species-appropriate animal husbandry

Our actions are characterised by a deep connection to nature and respectful treatment of all living things. But for us it goes even further - it's about love, compassion and a close bond with our animals. They are more than just part of our philosophy; they are an integral part of our daily lives. We firmly believe that good food and responsible behaviour are inextricably linked.

Our Galloway and Black Angus cattle live and grow on the meadow diagonally opposite us. His field is farmed sustainably. The animals are kept in species-appropriate free-range conditions and only receive natural and healthy feed. They are killed directly on the pasture by our hunter in a species-appropriate manner that is dignified, stress-free and without transport routes for the herd.

The Juradistel lambs graze right next to us in the meadows. The freshly caught fish comes from the nearby Kühlochtal valley. We source exclusively from carefully selected regional farmers who share our values.
